Hope you’ve all been enjoying the summer weather and the opportunity to eat lots of light and fresh food. Here’s another summer recipe from the Azul kitchen for you to try. Let us know what you think!Green salad with pomegranate and grapefruit


½ lettuce head

½ grapefruit, chopped

1 pomegranate, peeled

1 apple, chopped

For the dressing:

Juice of ½ grapefruit

2 tbsp extra virgin olive oil

1 tbsp honey

Sea salt to taste


Prepare the vegetables and fruit and combine in a salad bowl.

Whisk the dressing, add to the salad and mix.
